Tortilla soup

Toss the following ingredients into a pot and heat.
1 can of low sodium chicken broth-I used boulion and made 1 1/2 c.
1 can of mexicorn
1 can of diced tomatoes with chilis
1 can of non fat refried beans
half can of black beans
3/4 pack of taco seasoning (or 1 - 2 T from recipe below)
1 pack of pre-cooked southwest chicken strips-I used precooked chicken chunks

Taco seasoning: (this is what I used for this recipe)
1 T. Chili Powder
1/4 t. Garlic Powder
1/4 t. Onion Powder
1/4 t. Crushed Red Pepper
1/4 t. Dried Oregano
1/4 t. Paprika
1 1/2 t. Cumin
1 t. Cumin
1 t. Sea Salt
1 t. Black Pepper

  1. I am glad that I kept the one I messed up on because ours was FAR too spicy! We love spicy too which is CRAZY. I accidentally used a can of spicy chipotle flavored refried beans in ours. Yikes won't do that mistake twice. We did really like it though. We added a dollop of sour cream to cut the heat a bit. I would recommend this if you would like it to be a bit creamier. I think next time I may cut the chicken into smaller chunks.

  3. Very very good! Almost too spicy for my daughter, but we loved it. It was awesome with a dollop of sour cream. I'm also glad you just used pre-cooked chicken chunks.
